What you need: sweet onions, hot sauce, bacon, and pepper.
Cut the onion in half so you get 1/2-inch-tall rings. Take out the center parts out of the onion and leave two layers per ring for the perfect onion ring thickness.
Brush each of your rings with hot sauce.
Sriracha works really well because it's thicker than most and stays on the ring instead of dripping off.
Wrap the bacon around the onion rings (you'll probably need around three slices of bacon per ring) and stick a skewer or toothpick through the center.
Grill the onion rings for about 90 minutes or until the bacon looks cooked. Just keep in mind that the longer it stays on the grill, the softer the onion inside will be!
If you want the Sriracha dipping sauce, just mix two tablespoons of mayonnaise, 1 tablespoon of Sriracha, and 1 teaspoon of lime juice.
