There's a MUCH more scientific reason than this, we promise!
It's because the flavor compounds don't overlap, molecularly, as often as the flavors used in other types of cuisine!
Flavor compounds of different foods have a lot to do with the sensation you get when eating them. Since Indian food uses so many distinct flavors that don't overlap, it's ultimately a larger variety of flavors you're tasting.
