Nachos are a thing of beauty.
They're so complex—they're gooey, they're cheesey, and if made right, they have a little bit of that jalapeño kick to them.
So before your next nacho binge, why not brush up on the truth behind your go-to snack?
1. The original nachos were nothing more than cheese, tortilla chips and jalape?os.
Beef, beans, etc. are all recent, more modern, additions!
2. The tortilla chips are actually all American!
While the entire nacho meal did start in Mexico, tortilla chips were invented by an American tortilla factory.
3. "Nacho" is a nickname for "Ignacio," and the dish is actually named after one man.
In a high-pressure situation this particular Ignacio had to come up with a delicious dish using only what he had in his kitchen. The world thanks him for the creation.
4. The Mexican-Texan border was the home of the first nachos.
Ol' Nacho was working in a restaurant in Mexico when some Texan wives came in. He was the maitre d'. They insisted on having a meal but no one could find the chef. Nacho whipped up something using what he could find!
5. "Nacho cheese"? Also an American invention.
When the nacho craze started in Texas, some people decided to try and find a shortcut to creating the dish.
6. The FDA does not consider nacho cheese to be a legitimate cheese.
Not sure I can blame them...
7. Nacho cheese has, however, begun to outsell popcorn as the bestselling snack at ballparks.
8. By 1949, America had become introduced to the beauty of the nacho.
To be clear, 1949 was the first year it appeared in an English cookbook. It had certainly been enjoyed before then!
9. The largest plate of nachos ever created weighted 4, 689 pounds and was created at a school in Kansas.

Nacho chips date back to the 1940s, in fact, so don't be stingy and make sure you share with your grandparents!
11. Nachos aren't inherently unhealthy.

National Nacho Day is November 6 and the Day of the Nacho is October 21.
